As this is a somewhat mixed bag of a post comments-wise, this is probably a good place to put this: ![]() Get some fresh jalapenos. Slice off the stem end, then cut a slice down one side. Put them in boiling water for 3 to 5 minutes, until they start to soften. Scoop them out and let them drain. While the peppers are cooling, mix some cream cheese with some chipotle and sharp cheddar. (I like to go heavy on the cheddar, so it's kinda thick.) Take a cooled pepper and scoop out the veins and the seeds with a spoon. Fill the pepper with the cheese mix. Do that to all of them. Wrap each pepper in a half slice of bacon, preferably thick cut. Put them on a skewer. Important- leave a gap (1/4" or so) between them. You can fit six comfortably on a bamboo skewer. Broil them until the bacon is reasonably well done. I do this on an old pizza pan with a layer of foil on it to contain the grease and other fluids. Let them cool for a few minutes, then move them to plates. Stand back lest you get trampled underfoot by the stampede. (By the way, don't eat more than maybe three of these unless you don't mind your insides being purged the next day.) |
